Upgrade classic potato bake with sweet & sticky ham-inspired topping of honey, maple syrup, bacon, Dijon-infused creamy potatoes. Easy, affordable, perfect for any occasion. Slice potatoes thinly for best results.
Ingredients:
  • 200g streaky bacon rashers
  • 50g butter
  • 300ml thickened cream
  • 11.80 gm Dijon mustard
  • 1.25kg potatoes, peeled, thinly sliced
  • 1 brown onion, halved, thinly sliced
  • 120g (1 1/2 cups) grated 4 cheese blend
  • 28.60 gm honey
  • 27.00 gm maple syrup
Instructions:
  • Preheat the oven to 200C/180C fan-forced and grease a 5cm-deep, 6-cup-capacity ovenproof dish.
  • Cut bacon into thin strips. Cook in a large non-stick frying pan over medium heat for 5 minutes until golden. Add half the butter and melt it. Transfer half the bacon to a bowl. Leave the rest in the pan for the topping. Whisk cream, mustard, salt, and pepper together.
  • Arrange a quarter of the potato slices in the dish, slightly overlapping them. Top with a third of the onion and buttery bacon. Repeat with another layer of potatoes, then sprinkle with half of the remaining onion and bacon. Drizzle half of the cream mixture over the layers.
  • Create another layer of potatoes and generously sprinkle over the remaining onions and bacon. Finish with a final layer of potatoes. Drizzle the top with the rest of the creamy mixture. Cover the dish with foil and place it on a baking tray. Bake for 50 minutes or until the potatoes are perfectly tender.
  • Uncover and generously sprinkle cheese on top. Bake for an additional 10-15 minutes until the potatoes are tender and the cheese is gooey. Transfer the dish to a serving board. In the same pan used to cook the bacon, melt the remaining butter and mix in the maple syrup and honey. Cook over medium-low heat for about 2 minutes until the bacon is warmed through and the glaze is sticky. Drizzle this mixture over the potato bake and serve.
