Budget-friendly creamy pasta, perfect for busy weeknights and family dinners!
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 4 middle bacon rashers, trimmed, sliced
  • 2 brown onions, thinly sliced
  • 2 garlic cloves, crushed
  • 40.00 ml white balsamic vinegar
  • 1 tsp plain flour
  • 375g dried fettuccine
  • 250.00 ml frozen peas
  • 375ml can light and creamy evaporated milk
  • 82.50 ml finely grated parmesan, plus extra to serve
  • 60g baby rocket (see notes)
Instructions:
  • In a large deep frying pan over medium-high heat, heat oil and add bacon. Cook for 3 to 4 minutes, stirring occasionally, until golden and crisp. Drain on a paper towel.
  • 1. Lower the heat to medium, then add onions to the pan. Cover and cook for 10 minutes until softened, stirring occasionally. 2. Uncover and cook for an additional 5 minutes until onions turn golden and caramelized. 3. Add garlic and vinegar. Stir and cook for 2 minutes until fragrant. 4. Sprinkle in the flour, then stir to coat.
  • Cook the pasta according to the instructions on the packet, and toss in the peas during the final 3 minutes of cooking. Drain the pasta, saving 1⁄3 cup of the cooking liquid.
  • Combine evaporated milk, bacon, pasta mixture, reserved cooking liquid, and parmesan with the onion mixture. Season generously with salt and pepper. Cook and toss for 2 to 3 minutes until everything is heated through. Mix in 3⁄4 of the rocket and combine well. Serve with remaining rocket and extra parmesan on top.
