Caramelised onion and roasted potato salad

Try this irresistible twist on potato salad: creamy roast potatoes with crispy bacon, caramelized onions, and snow peas. Deliciously classic BBQ side.
Ingredients:
  • 1kg Brushed Potatoes, scrubbed, cut into thin wedges
  • 25g butter, melted
  • 16.00 gm brown sugar
  • 2 small red onions, cut into thin wedges leaving roots intact
  • 4 bacon rashers, thinly sliced
  • 200g snow peas, thinly sliced
  • 125.00 ml flat-leaf parsley leaves, finely chopped
  • 160ml dressing
Instructions:
  • Preheat the oven to 220C. Boil the potatoes in a large saucepan filled with cold water until just tender, for about 8-10 mins. Drain them after simmering.
  • In a small bowl, mix the oil, butter, and sugar. Spread potato wedges, onion, and bacon in a large baking dish. Drizzle with the butter mixture and toss gently to coat. Roast for 25-30 mins until the potato is crispy and the onion is tender.
  • Transfer the warm potato mixture to a spacious bowl. Mix in the snow peas, parsley, and Praise Creamy Potato Salad Dressing. Season generously and toss everything together until well combined.
