Elevate roasted potatoes with caramelized onions and truffle oil for a gourmet twist!
Ingredients:
  • 1 pound small, new potatoes, scrubbed, quartered
  • 1 large yellow onion, peeled, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  • Several shakes white truffle oil, about 1/2 teaspoon
Instructions:
  • Preheat your oven to a toasty 400°F.
  • Coat onions and potatoes: Place onions and potatoes in a roasting pan, drizzle with olive oil, and toss to coat evenly. Season generously with salt and pepper. Arrange potatoes in a single layer in the pan.
  • Roast at 400°F until potatoes are lightly browned and cooked through, about 40 minutes.
  • Drizzle generously with aromatic truffle oil, ensuring the potatoes and onions are well coated. Gently toss to combine.
