Indulge in caramelized onions, roasted bell peppers, and tangy kalamata olives on a delicious pizza-inspired pie.
Ingredients:
  • 2 brown onions, halved, thinly sliced
  • 1 red capsicum, halved, seeded
  • 2 sheets (25 x 25cm) frozen butter puff pastry, just thawed
  • 110g pkt goats cheese, crumbled
  • 80g (1/2 cup) pitted kalamata olives
  • 82.50 ml fresh basil, torn
Instructions:
  • In a frying pan over high heat, heat oil. Add onion and reduce heat to medium-low. Cook for 15 minutes or until golden and caramelised, stirring occasionally. Set aside to cool.
  • Preheat grill to medium-high heat as you place the capsicum on a baking tray, skin-side up. Grill for 10 minutes until the skin is charred. Then, transfer the capsicum to a bowl, cover with plastic wrap, and allow it to cool. Peel off and discard the skin, then slice the flesh into 1cm-thick strips.
  • Preheat the oven to 220°C. Line a baking tray with non-stick baking paper. Place 1 pastry sheet on the tray, leaving a 2cm border, then evenly spread with the onion. Layer on the capsicum, goats cheese, olives, and basil. Roll out the second pastry sheet on a floured surface to cover the pie. Place on top. Seal and decorate the edges with a fork.
  • Bake the pie on the lowest oven shelf for 20 minutes, then move it to the middle shelf and continue baking for another 20 minutes or until golden brown.
