Chicken, caramelised onion and sweet potato pizza

Make gourmet pizza at home instead of ordering takeout.
Ingredients:
  • Olive oil spray
  • 1 (about 200g) single chicken breast fillet, thinly sliced
  • 4 brown onions, halved, thinly sliced
  • 32.00 gm brown sugar
  • 125ml (1/2 cup) Mutti Tomato Passata
  • 1 x 500g pkt rectangular pizza bases
  • 1 small (about 200g) orange sweet potato (kumara), peeled, thinly sliced
  • 60g goat's cheese, crumbled
  • 40g baby rocket leaves
Instructions:
  • Preheat your oven to a toasty 220°C and warm up 2 baking trays inside.
  • Lightly grease a large non-stick frying pan with olive oil spray. Heat over medium-low heat. Cook the chicken, stirring occasionally, for 2 minutes until golden and cooked through. Transfer to a plate. Add the onion to the pan and cook for 8-10 minutes until soft and golden, stirring frequently. Add the sugar and cook until dissolved, about 1 minute.
  • Evenly spread the passata on the pizza bases. Sprinkle the onion mixture over the passata. Arrange sweet potato, chicken, and goat's cheese on top. Season with salt and pepper.
  • Take out the baking trays from the oven and place the pizzas on top. Bake them in the oven for 15-20 minutes, swapping trays halfway through, until the potato is soft and the bases are crisp.
  • Generously scatter fresh arugula on the pizzas and sprinkle with a pinch of salt and pepper. Slice them up and enjoy while still hot.
