Elevate your roast chicken by adding grapes for a sweet and juicy finish.
Ingredients:
  • 2.2kg Whole Extra Large Chicken
  • 80ml olive oil
  • 2 large red onions, peeled, cut into wedges
  • 32.00 gm brown sugar
  • 40.00 ml balsamic vinegar
  • 1 garlic bulb, halved
  • 12 thyme sprigs
  • 350g red grapes
  • 1 bunch watercress, leaves picked
  • 1 Lebanese cucumber, cut into ribbons
  • 28.75 gm walnuts, coarsely chopped
Instructions:
  • Preheat the oven to 190C. Place the chicken in a large roasting pan and coat the skin with 1 tablespoon of oil. Season the chicken, then tie the legs together with kitchen string. Roast for 45 minutes.
  • Combine onion, brown sugar, half of the vinegar, and 2 tablespoons of oil in a bowl. Mix well. Spread mixture around the chicken along with garlic and thyme sprigs. Roast everything for 45 minutes, adding grapes in the last 30 minutes, until chicken is cooked through.
  • Lay out the watercress, cucumber, and walnuts beautifully on a large serving platter. Drizzle with the remaining oil and vinegar, season to taste, then finish by adding the onion, grapes, and chicken on top.
