Romantic roast chicken with luscious figs for a special Valentine's dinner.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 chicken supremes
  • 70g piece pancetta, chopped
  • 1 red onion, cut into wedges
  • 3 figs, halved lengthways
  • 8.00 gm brown sugar
  • 125ml (1/2 cup) white wine
  • 125ml (1/2 cup) chicken style liquid stock
  • 2 tsp sherry vinegar or red wine vinegar
  • 7 sprigs fresh thyme
Instructions:
  • Preheat the oven to 200C/180C fan forced. Heat oil in a large ovenproof skillet over high heat. Season chicken with salt, then cook skin-side down for 3 minutes until golden. Flip and cook for another 3 minutes. Transfer chicken to a plate.
  • Place the pancetta and onion in the pan over medium heat. Cook while stirring frequently for about 5 minutes until the pancetta turns crispy. With a slotted spoon, transfer the mixture to the plate with the chicken. Discard any extra fat from the pan.
  • Sprinkle the fig halves with a touch of sugar, then place them cut-side down in the pan. Cook for 3 minutes until caramelized, then transfer to a small plate.
  • Pour the wine into the pan and let it simmer for 2 minutes until slightly reduced. Pour in the stock and vinegar and simmer for an additional 2 minutes. Place the chicken and pancetta mixture back into the pan, sprinkle thyme on top. Bake for 30 minutes until chicken is fully cooked. Take it off the heat and gently mix in the figs.
