Baked chicken with tangy red currant jelly-mustard sauce, topped with crunchy almonds.
Ingredients:
  • 3 tablespoons butter
  • 1 (3 pound) chicken, cut into pieces
  • 1 (14 ounce) jar red currant jelly
  • 0.5 cup yellow mustard
  • 0.5 cup blanched slivered almonds
  • 3 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 0.5 teaspoon ground cinnamon
Instructions:
  • In a large skillet over medium heat, melt butter until sizzling. Saute chicken for about 10 minutes until golden brown all over. Transfer the chicken to a 9x13 inch baking dish and keep aside.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Add a delightful combination of jelly, mustard, almonds, sugar, juice, and cinnamon to a skillet. Cook over medium heat, stirring constantly, until the jelly dissolves. Drizzle the flavorful mixture over the chicken.
  • Cover the dish and bake in the preheated oven for 30 minutes. Uncover and bake for another 10 minutes or until chicken is fully cooked (no longer pink inside).
