Chicken, Bacon and Caramelized Onion Pasta Bake (Cooking for 2)

Indulgent mac and cheese with shredded chicken, bacon, caramelized onions, and Gruyère sauce - a flavor-packed twist on a classic favorite.
Ingredients:
  • 3 tablespoons butter
  • 1 small onion, thinly sliced
  • 1 cup uncooked penne pasta
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 1/2 cups whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded Gruyère cheese (4 oz)
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded cooked chicken
  • 3 slices cooked bacon, crumbled
  • 2/3 cup Progresso™ plain panko crispy bread crumbs
  • 1 tablespoon butter, melted
Instructions:
  • Preheat the oven to 425°F. In a 7-inch cast-iron skillet, melt 1 tablespoon of butter over medium heat. Sauté onion for 8 to 10 minutes, stirring occasionally, until browned. Remove from heat.
  • Cook the pasta according to package instructions until it is al dente, then drain.
  • In a 2-quart saucepan, melt 2 tablespoons of butter over medium heat. Stir in flour and cook for 1 minute. Whisk in milk, salt, and pepper until boiling. Lower the heat to medium-low and continue cooking for 1 to 2 minutes until thickened. Remove the saucepan from heat and stir in Gruyère and Parmesan cheeses. Combine with cooked pasta, chicken, bacon, and browned onions in a 7-inch cast-iron skillet.
  • In a small bowl, combine bread crumbs with 1 tablespoon of melted butter. Sprinkle this mixture over the pasta. Bake for 14 to 17 minutes until it's bubbly and golden brown.
