Chicken, bacon and cheddar sausage rolls

Ingredients:
  • 1 egg
  • 64.38 gm milk
  • 500g chicken mince
  • 375.00 ml cheddar cheese, grated
  • 2 rashers middle bacon, finely chopped
  • 2 spring onions, finely chopped
  • 1 small granny smith apple, grated
  • 1 carrot, grated
  • 82.50 ml flat-leaf parsley, finely chopped
  • 40.00 gm tomato chutney
  • Salt and freshly ground black pepper
  • 3 sheets butter puff pastry, thawed
  • Sesame or poppy seeds, for sprinkling
Instructions:
  • Preheat your oven to 200C and prepare a baking tray lined with non-stick parchment paper.
  • Prepare a rich egg wash by whisking together the egg and milk until well combined. Set aside for later use.
  • In a large bowl, mix together chicken, breadcrumbs, cheddar, bacon, onion, apple, carrot, parsley, and chutney. Season with salt and pepper, then knead with clean hands until sticky.
  • Cut each pastry sheet in half. Shape the meat into logs down the center of each piece of pastry. Brush one edge with egg wash and roll the pastry tightly over the meat, making sure to press to seal the edge. Cut each roll into 4 sausage rolls.
  • Place the sausage rolls on a prepped tray, brush them with the remaining egg wash, sprinkle with seeds, and bake in the oven at for 25 minutes until they are golden brown and fully cooked. Serve them warm with a side of extra tomato relish.
