Bubbling bacon cheddar dip recipe

Creamy bacon and cheese dip made with chicken stock, cream cheese, and bacon bits. Topped with more bacon and chives, served with warm crusty bread for dipping.
Ingredients:
  • 200g streaky bacon rashers, finely chopped
  • 1 medium brown onion, thinly sliced
  • 250g cream cheese
  • 125ml (½ cup) thickened cream
  • 120g (1 ½ cups) grated cheddar cheese
  • 2 tsp Chicken Style Stock Powder, plus ½ tsp extra to sprinkle
  • 20.00 ml chopped fresh chives
  • 1 large cob loaf
  • 36.40 gm olive oil
Instructions:
  • Preheat your oven to 180C (160C fan forced).
  • In a medium frying pan over medium heat, crisp up the bacon, stirring occasionally. Once crispy, transfer to a plate. Add the onion to the pan and cook until golden, about 4-5 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Set aside to cool.
  • Mix together the cream cheese, cream, 1 cup of cheddar, and stock powder in a bowl. Gently stir in the onion and half of the bacon. Transfer the mixture to a round 20cm ovenproof baking dish and spread it evenly.
  • Top the rest of the cheese and bacon over the dish. Bake for 25 minutes, or until the dip turns golden and starts bubbling.
  • Cut the cob loaf into 2cm squares without fully separating them, then lay them on a baking tray. Drizzle with olive oil and sprinkle with extra stock powder. Bake for 20-25 minutes until the cob is crispy.
  • Garnish the dip with chives and accompany it with bread.
