Family-friendly creamy chicken curry with a mild and delicious flavor profile.
Ingredients:
  • 36.80 gm vegetable oil
  • 800g chicken thigh fillets, each cut into 3 pieces
  • 1 brown onion, thinly sliced
  • 5.00 gm curry powder
  • 1 tsp turmeric powder
  • 250ml (1 cup) chicken stock
  • 300ml Cooking Cream
  • 2 lemons, rind finely grated
  • 125ml (½ cup) fresh lemon juice
  • 500g baby coliban (chat) potatoes, cut into 2cm pieces
  • 120g baby spinach
  • Steamed rice, to serve
Instructions:
  • In a large flameproof casserole dish over medium-high heat, sear the chicken in vegetable oil for 3-4 minutes per side until golden brown.
  • Saute the onion for 2-3 minutes until softened. Stir in the curry powder and turmeric for 30 seconds until fragrant. Deglaze the pan by adding the stock and scraping any cooked bits from the base with a wooden spoon.
  • - Pour the cooking cream into the pot followed by adding the lemon rind and juice. Mix in the potatoes and stir well. Bring the mixture to a boil, then decrease the heat to medium, cover, and simmer for 30-35 minutes until the potatoes are tender. Lastly, add the spinach and cook until wilted and the sauce has thickened, stirring occasionally. Season to taste.
  • Sprinkle over a bed of fluffy aromatic rice.
