Bubbling Mexican cheese fest dip recipe

Try this easy and hearty Mexican dip made in a cast iron pan. Ready in just 30 minutes, it's the perfect satisfying dinner or snack.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 250g lean beef mince
  • 35g sachet nacho spice mix
  • 1 large red onion, finely chopped
  • 420g can black beans, rinsed, drained
  • 375g jar thick and chunky mild salsa
  • 375g cream cheese, chopped
  • 80g (1 cup) Mexican-style grated cheese blend
  • 1 avocado, chopped
  • 2 tomatoes, chopped
  • 62.50 ml coriander leaves
  • Corn chips, to serve
Instructions:
  • Preheat oven to 200C (180C fan-forced).
  • In a large cast iron frying pan over medium-high heat, warm oil until shimmering. Brown beef for 3-4 minutes, breaking up lumps with a wooden spoon. Mix in the spice blend. Push beef to one side of the pan and add onion, beans, salsa, cream cheese, and cheese blend in separate sections to the pan.
  • Bake in the oven for 10-12 minutes until the cream cheese is softened. Stir well to combine.
  • Garnish with sliced avocado, fresh tomato, and cilantro. Accompany with crunchy corn chips.
