Poutine, Canada's ultimate comfort food, features crispy fries topped with fresh cheese curds and savory gravy. This homemade recipe includes hand-cut fries, chopped mozzarella and cheddar, and a rich bacon and red wine-infused gravy for the perfect poutine experience.
Ingredients:
  • 1kg brushed potatoes, peeled, cut into 2cm-thick batons
  • 30g butter
  • 100g bacon, cut into thin strips
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 4 sprigs thyme, finely chopped
  • 20.00 ml plain flour
  • 180ml (3/4 cup) chicken style liquid stock
  • 80ml (1/3 cup) red wine
  • Rice bran oil, to deep-fry
  • 100g cheddar, finely chopped
  • 50g mozzarella, finely chopped
Instructions:
  • Immerse the potato in a sizable bowl of chilled water for 2-3 hours.
  • In a large frying pan over medium-high heat, melt the butter until sizzling. Add the bacon and cook for 3-5 minutes, stirring frequently until it turns golden brown. Transfer the crispy bacon to a paper towel-lined plate using a slotted spoon. Keep it aside for later use.
  • Combine onion, garlic, and thyme in the pan over medium-low heat. Saute for 5-7 minutes until the onion turns golden. Add flour, stir for 30 seconds, then slowly pour in stock and wine. Increase heat to medium, deglaze the pan, and bring to a boil. Reduce heat and simmer until sauce thickens, about 2-3 minutes. Strain into a microwave-safe jug.
  • Fill a large saucepan with oil until it reaches two-thirds up the sides. Heat over high heat until the oil reaches 180C (or when a piece of bread dropped in turns golden in 30 seconds). Drain and pat dry the potatoes. Deep-fry them for 5-8 minutes until golden and crunchy. Drain on paper towel.
  • Microwave the gravy until warm. Divide chips onto four plates and top with cheese and bacon. Drizzle with warm gravy before serving.
