Indulge in Chef John's luxurious beef chuck gravy, shining in this homemade poutine.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound boneless beef chuck, chopped, or more to taste
  • 4 tablespoons butter
  • 1 cup diced onions
  • salt to taste
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 0.33333334326744 cup all-purpose flour
  • 4 cups homemade beef broth
  • 1 (16 ounce) package crinkle-cut French fries, or to taste
  • 1 cup fresh cheese curds, or to taste
  • 1 teaspoon chopped fresh chives, or to taste
Instructions:
  • Heat oil in a pan over high heat. Add beef chuck and cook, stirring, until juices evaporate and the beef begins to brown and caramelize on the bottom of the pan, about 5 to 7 minutes. Lower the heat to medium and add butter, stirring until melted.
  • Enhance the beef by sautéing onions, salt, pepper, and a pinch of cayenne until the onions are tender and golden, for about 2 to 3 minutes. Incorporate flour and cook until it emanates a warm pie crust aroma, for another 2 to 3 minutes. Transition by introducing broth and bring to a high simmer. Reduce heat to medium and allow the mixture to simmer uncovered until the gravy thickens to your liking, approximately 15 to 20 minutes, stirring intermittently. Adjust seasoning with salt to taste.
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and spread fries evenly on a baking sheet.
  • Roast in the oven until perfectly crispy and golden brown, turning halfway through, for 13 to 18 minutes.
  • Cover a platter with fries. Sprinkle cheese curds over fries. Pour beef gravy over the fries. Finish with chives for garnish.
