Quick and easy skillet dish with bacon, caramelized onions, and cheese for a flavorful meal with minimal cleanup.
Ingredients:
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 0.25 teaspoon salt
  • 0.25 teaspoon lemon pepper seasoning
  • 1 tablespoon vegetable oil
  • 8 strips bacon
  • 1 onion, sliced
  • 0.25 cup packed brown sugar
  • 0.5 cup shredded Colby-Monterey Jack cheese
Instructions:
  • Season the chicken generously with salt and zesty lemon-pepper seasoning.
  • In a large skillet over medium heat, sizzle the chicken breasts in oil until they turn white in the middle and release clear juices, about 13 to 15 minutes. Use an instant-read thermometer to ensure the center reaches at least 165 degrees F (74 degrees C). Set aside to keep warm.
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, turning occasionally, for about 10 minutes. Place the cooked bacon slices on paper towels to drain; set aside 2 tablespoons of drippings. In the same skillet, sauté onions and brown sugar in the reserved drippings until the onions turn golden, about 5 minutes.
  • Lay 2 bacon strips on each chicken breast half, then add caramelized onions and a sprinkle of Colby-Monterey Jack cheese.
