Elevate baked chicken with a divine sauce of balsamic vinegar, sundried tomatoes, and caramelized onion.
Ingredients:
  • 1 onion, chopped
  • 2 chicken leg quarters
  • 4 cloves garlic, chopped
  • 1.5 cups chicken stock
  • 0.5 cup balsamic vinegar
  • 0.5 cup chopped sun-dried tomatoes
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over medium heat. Add onion and caramelize over low heat, stirring occasionally to prevent sticking and ensure even cooking. Stir in garlic and saute briefly.
  • Turn the heat up to medium and place the chicken hindquarters in the skillet to sear until golden brown on both sides. Transfer the chicken, onion, and garlic to a 9x13 inch baking dish.
  • In a skillet, combine the stock and vinegar. Deglaze the skillet with this mixture, then simmer until thickened. Pour over chicken, add sun-dried tomatoes, cover tightly, and bake in preheated oven until chicken is cooked through, about 15-20 minutes.
