French onion chicken: A quick, flavorful twist on a classic soup, ready in 30 minutes. Perfect with crusty bread for a delicious meal.
Ingredients:
  • 5 tablespoons unsalted butter, divided
  • 1 1/4 pounds boneless, skinless chicken breast tenderloins
  • 1 1/2 teaspoons kosher salt, divided
  • 3/4 teaspoon freshly ground black pepper, divided, plus more for garnish
  • 1 large sweet onion, thinly sliced (about 3 cups)
  • 1 tablespoon light brown sugar
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons chopped fresh thyme, plus more for garnish
  • 4 ounces Swiss cheese, shredded (about 1 cup)
Instructions:
  • Heat things up by melting a luxurious tablespoon of butter in a medium (about 10-inch) oven-safe skillet over medium heat. Season the chicken tenderloins all over with a tantalizing teaspoon of salt and a pinch of pepper. Place the seasoned chicken in the skillet in a single even layer. Sear until beautifully browned, approximately 6 minutes total, turning as needed. Once done, plate the chicken and set it aside. Don't worry if it's not fully cooked—it will be perfection later. Resist the urge to wipe the skillet clean; let those amazing flavors shine through!
  • Preheat the broiler by setting the oven to broil with a rack positioned 6 inches below the heat source.
  • Caramelize the onions: Melt the remaining butter in the skillet over medium-high heat. Add the onions and sugar, and cook, stirring frequently, until the onions are soft and slightly golden, approximately 10 minutes.
  • Create the sauce: Begin by cooking the flour, stirring constantly for 1 minute. Slowly whisk in the broth and Worcestershire sauce until a smooth consistency is achieved. Incorporate the thyme, along with the remaining 1/2 teaspoon of salt and pepper.
  • Return the chicken to the skillet, ensuring it's in a single layer, and let the sauce come to a simmer over medium-high heat. Continue cooking, stirring and flipping the chicken regularly, until the sauce thickens and a thermometer inserted into the thickest part of the chicken reads 165°F, approximately 2 minutes. Remove from heat.
