Ingredients:
  • 0.25 cup finely chopped fresh cilantro
  • 1 clove garlic, minced
  • 0.25 jalapeno chile pepper, seeded and minced
  • 2 tablespoons finely grated fresh lime zest
  • 1.5 teaspoons salt
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon chipotle chile powder
  • 1 tablespoon olive oil
  • 1 pound chicken breast tenderloins or strips
  • 1 medium tomato, chopped
  • 1 small sweet onion, finely chopped
  • 2 tablespoons finely chopped fresh cilantro
  • 0.5 jalapeno chile pepper, seeded and minced
  • 1 clove garlic, finely chopped
  • 0.125 teaspoon chipotle chile powder
  • 1 tablespoon fresh lime juice
  • 1 sweet onion cut into 1/2-inch slices
  • 1 red bell pepper, quartered
  • 0.5 teaspoon minced garlic
  • 0.5 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 16 thick slices French bread
  • 2 mangos - peeled, seeded, and sliced
  • 8 slices Monterey Jack cheese
Instructions:
  • Prepare the marinade by combining cilantro, garlic, jalapeno, lime zest, salt, onion powder, black pepper, chipotle chile powder, and olive oil in a bowl. Stir well. Place chicken tenderloins in a resealable bag, add the marinade, seal, and shake to coat. Refrigerate for 1 hour.
  • Make a flavorful salsa by mixing together diced tomato, a small onion, chopped cilantro, sliced jalapeno, minced garlic, black pepper, sea salt, chipotle pepper, and fresh lime juice in a bowl. Cover with plastic wrap and chill in the fridge.
  • Combine the onions and red peppers in a bowl with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1 clove of garlic; mix well and set aside.
  • Make zesty lime mayonnaise by combining mayonnaise with 2 tablespoons of fresh lime juice, then chill it in the fridge covered with plastic wrap.
  • Heat up your outdoor grill until it reaches medium-high heat.
  • Cook the marinated chicken on the grill until no longer pink in the center and juices run clear, about 8 to 10 minutes. Grill the red pepper and onions until tender and golden brown, also 8 to 10 minutes. Take the chicken and vegetables off the grill, then slice the pepper into thin strips.
  • Spread each slice of bread with zesty lime mayo. Assemble sandwiches by layering mango, salsa, grilled chicken, peppers, onions, and Monterey Jack cheese on half the slices. Top with remaining bread slices and grill until golden brown. Enjoy the flavorful result!
  • Continue grilling the sandwiches until the bread is crispy and the cheese has melted, around 2 minutes per side.
