Amazing Maltesers cake

Indulgent Maltesers-inspired dessert that is absolutely mouthwatering!
Ingredients:
  • 270g (1 1/3 cups, firmly packed) brown sugar
  • 250ml (1 cup) milk
  • 160g butter, chopped
  • 225g (1 1/2 cups) self-raising flour
  • 50g (1/3 cup) plain flour
  • 70g (2/3 cup) cocoa powder
  • 3 eggs, lightly whisked
  • 185g butter, extra, at room temperature
  • 345g (2 1/4 cups) icing sugar mixture
  • 95g (3/4 cup) malted milk powder
  • 20.60 gm milk, extra
  • 655g Maltesers
  • 300g dark cooking chocolate, finely chopped
  • 125ml (1/2 cup) thickened cream
  • 30g butter
Instructions:
  • Preheat the oven to 140C/120C fan-forced, then generously grease a 20cm round cake pan with butter and line the base and sides with baking paper.
  • Combine the brown sugar, milk, and butter in a microwave-safe bowl. Microwave on high, stirring every minute, until the butter melts and the mixture is smooth, about 3-4 minutes.
  • Whisk the flour and cocoa powder into the butter mixture using a balloon whisk, then mix in the egg. Pour the batter into the prepared pan and bake for 1 hour and 20 minutes, or until a skewer inserted into the center comes out clean. Allow the cake to cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
  • Create the ganache by combining chocolate, cream, and butter in a microwave-safe bowl. Microwave on high, stirring every minute, until the chocolate completely melts and the mixture becomes smooth, which should take around 2-3 minutes.
  • Beat the extra butter in a bowl with an electric beater until pale and creamy, then mix in the icing sugar, malted milk powder, and extra milk until fluffy. Finally, beat in 1 1/2 tablespoons of ganache.
  • Allow the ganache to rest for 1 hour and 30 minutes, or until it thickens, develops a glossy finish, and can be easily spread.
  • Using a large serrated knife, delicately slice the cake into four layers horizontally. Place the cake base on a platter and generously spread one-third of the icing. Proceed to layer the remaining cake and icing, ending with the final layer of cake. Cover the cake and refrigerate for 90 minutes before serving.
  • Evenly coat the cake with the rich ganache, then adorn with delicious Maltesers for the perfect finishing touch.
