Chicken in Onion and Mustard Sauce

Versatile and simple dish, easily customizable with pantry ingredients.
Ingredients:
  • 3 skinless, boneless chicken breast halves
  • 1 pinch ground black pepper
  • 1 small red onion, sliced
  • 1 tablespoon dried parsley
  • 0.5 cup applesauce
  • 0.25 cup white wine
  • 2 tablespoons mustard
  • 0.25 cup half-and-half cream
  • 0.5 cup chopped walnuts
Instructions:
  • In a skillet over medium heat, melt butter. Season both sides of the chicken with pepper. Cook the chicken in the butter until no longer pink in the center and the juices run clear, about 6 to 7 minutes per side. Use an instant-read thermometer to check that the center reaches at least 165 degrees F (74 degrees C). Remove the chicken breasts from the pan and set them aside.
  • Combine onion, parsley, applesauce, wine, mustard, and half-and-half in the pan and bring to a boil. Cook for about 5 minutes. Return chicken to the pan and add walnuts. Simmer until chicken is heated through, about 3 to 5 minutes.
