Lemon pepper garlic chicken baked in tomato-onion sauce for a simple weeknight meal.
Ingredients:
  • 1 (16 ounce) can crushed tomatoes
  • 0.5 small white onion, thinly sliced
  • 3 tablespoons balsamic vinegar
  • 0.5 teaspoon ground cumin
  • 4 skinless, boneless chicken breast halves
  • 0.5 tablespoon Italian seasoning
  • 0.5 tablespoon lemon pepper seasoning
  • 0.5 teaspoon garlic salt
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a small bowl, mix together crushed tomatoes, onion, vinegar, and cumin for a flavorful base.
  • Place the chicken breasts in a baking dish and generously season with Italian seasoning, lemon pepper, and garlic salt before pouring the tomato mixture over the top.
  • Roast in the heated oven until the chicken is fully cooked and the juices run clear, approximately 30 minutes. Check with a meat thermometer - it should register at least 165°F (74°C).
