Balsamic Goat Cheese Stuffed Chicken Breasts

Butterflied chicken breasts stuffed with creamy goat cheese, baked in a sweet and tangy balsamic reduction. Easy and quick gourmet dish.
Ingredients:
  • 1 teaspoon olive oil
  • 1 shallot, finely diced
  • 1 cup balsamic vinegar
  • 2 skinless, boneless chicken breast halves
  • 2 ounces goat cheese, divided
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • In a skillet over medium heat, sauté shallot in olive oil until translucent, approximately 5 minutes. Add balsamic vinegar to the skillet and bring to a boil. Reduce heat to low and simmer until the vinegar is reduced by half, stirring occasionally, for about 10 minutes.
  • Butterfly the chicken breasts by cutting horizontally through the middle, stopping within half an inch of the other side, then open them up like a book.
  • Spread a generous layer of goat cheese on one side of each chicken breast, drizzle a third of the balsamic reduction over the cheese, fold the chicken breasts to enclose the cheese, securing them with toothpicks. Place the chicken in a baking dish and finish by drizzling the remaining balsamic reduction over the top.
  • Roast in the oven until the chicken is fully cooked, the filling is piping hot, and the juices are clear, about 30-35 minutes or until a meat thermometer reads at least 160°F (70°C) when inserted into the center of a filled breast.
