Tangy goat cheese and sweet balsamic elevate this refreshing pear salad for any meal.
Ingredients:
  • 2 firm buerre bosc pears, halved, core removed, thinly sliced lengthways
  • 70g pkt baby rocket
  • 110g goat's cheese, crumbled
  • Freshly ground pepper
  • 27.30 gm light olive oil
  • 40.00 ml balsamic vinegar
  • 8 x 2cm-thick slices ciabatta or crusty bread
  • Olive oil spread
Instructions:
  • In a large bowl, mix the pear, rocket, and goat's cheese. Season generously with freshly cracked pepper. Drizzle with olive oil and balsamic vinegar, then toss everything together.
  • Preheat the sandwich press while spreading each ciabatta slice with olive oil spread. Toast for 5 minutes until crisp and golden. Serve hot with the salad.
