Charred Italian bread topped with creamy goat cheese and sweet strawberries tossed in balsamic vinegar for a delightful bruschetta.
Ingredients:
  • 0.5 cup balsamic vinegar
  • 12 slices Italian bread
  • 1 tablespoon olive oil
  • 1 pound strawberries, washed and diced
  • 2 teaspoons fresh thyme leaves, plus more for serving
  • 1 cup goat cheese, room temperature
  • salt and freshly ground pepper to taste
Instructions:
  • In a small skillet, gently warm the vinegar over medium-low heat until it reduces by half, about 8 to 10 minutes. Let it cool to room temperature before using.
  • Get the grill nice and hot. Place bread slices on a baking sheet lined with foil and generously drizzle with olive oil.
  • Mix strawberries and fresh thyme in a small bowl, allowing the flavors to meld.
  • Toast the bread on the hot grill until golden brown, approximately 3 minutes per side.
  • Smear goat cheese on crispy toasted bread. Season the strawberry mixture with black pepper, salt, and balsamic reduction. Drizzle over the goat cheese-covered bruschetta. Top with fresh thyme for a flavorful finish.
