Beetroot, peach and walnut salad recipe

Tangy fruit salad with mustard vinaigrette and creamy goat cheese - perfect BBQ side dish.
Ingredients:
  • 60ml olive oil
  • 40.00 ml red wine vinegar
  • 23.40 gm wholegrain mustard
  • 1 bunch small beetroot, ends trimmed
  • 2 yellow or white peaches, stoned, cut into wedges
  • 1 bunch radishes, thinly sliced
  • 120g pkt Baby Rocket
  • 100g strawberries, sliced
  • 100g goat’s cheese, crumbled
  • 50g walnut
Instructions:
  • Combine oil, vinegar, mustard, and sugar in a screw-top jar. Shake vigorously until fully mixed. Season to taste.
  • Thinly slice the beetroot using a vegetable peeler or mandolin. Combine in a large bowl with peach, radish, rocket, and strawberry. Drizzle with dressing and gently mix. Serve on plates and top with goat’s cheese and walnuts.
