Slow-Cooker Balsamic-Glazed Beets

Slow-cooked beets with toasted walnuts and goat cheese bring tangy flavor and flair to any meal.
Ingredients:
  • 3 lb beets, peeled, cut into 1/2-slices (4 1/2 cups)
  • 1 cup apple juice
  • 1/2 cup balsamic vinegar
  • 2 cloves garlic, finely chopped
  • 1/4 cup chopped walnuts
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/4 cup crumbled chèvre (goat) cheese with herbs (1 oz)
Instructions:
  • Grease a 3- to 4-quart slow cooker. Combine beets, apple juice, vinegar, garlic, and salt in the slow cooker.
  • Cover the dish and cook on high heat for 3 to 4 hours.
  • Sprinkle walnuts in an ungreased heavy skillet. Cook over medium heat for 5 to 7 minutes, stirring frequently until nuts begin to brown. Continue stirring constantly until nuts are light brown. Set aside.
  • Combine cornstarch and water in a small bowl, then mix into the beets in the slow cooker. Cook uncovered for an additional 5 to 10 minutes, or until the sauce thickens. Sprinkle with cheese and toasted walnuts before serving.
