Slow-cooked balsamic chicken with veggies - effortless elegance in every bite.
Ingredients:
  • 4 medium carrots, cut in half lengthwise, then diagonally into 1-inch pieces
  • 3 medium Yukon gold potatoes, each cut into 6 pieces
  • 1 medium red onion, cut into thin wedges
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 bone-in skin-on chicken thighs
  • 2 teaspoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 3 fresh thyme sprigs
Instructions:
  • Coat a 5-quart slow cooker with cooking spray. Add in carrots, potatoes, and onion. Season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  • Season chicken thighs with the remaining salt and pepper. Heat oil in a skillet. Brown chicken for 3 to 5 minutes on both sides. Transfer chicken to slow cooker.
  • Mix balsamic vinegar and honey in a small bowl. Pour over chicken in slow cooker. Add thyme sprigs and cook on High for 3 1/2 to 4 hours until chicken is fully cooked and vegetables are tender.
  • Remove the thyme sprigs from the pot and transfer the chicken and vegetables to a serving platter. Cover to keep warm. Pour the cooking liquid into a 1-quart saucepan and simmer over medium-high heat for 10 to 13 minutes until it thickens and reduces by half. Drizzle the sauce over the chicken and vegetables before serving.
