Sensational gourmet chicken salad with a perfect mix of sweet and salty flavors.
Ingredients:
  • 4 x 200g chicken breast fillets (skin on) (see note)
  • 2 buffalo mozzarella balls (see note) or 6 bocconcini, torn into bite-sized pieces
  • 4 prosciutto slices, torn
  • 500.00 ml rocket leaves
  • 220g caster sugar
  • 375ml red wine
  • 125ml balsamic vinegar
  • 1 cinnamon quill
  • 6 cardamom pods
  • 6 peppercorns
  • 2 star anise
  • 2cm piece ginger, thinly sliced
  • 4 lemon slices
  • 8 fresh figs
Instructions:
  • To make the figs, combine all ingredients except figs in a saucepan over medium-high heat. Simmer for 10 minutes. Add figs and simmer for an additional 3 minutes until slightly softened. Remove figs with a slotted spoon and set aside. Continue simmering the liquid for 4-5 minutes until reduced to 1 cup. Remove from heat, return figs to the pan, and let cool. (Figs can be prepared up to 2 days ahead.)
  • Preheat oven to 180°C. Season chicken and sear in a hot ovenproof pan until golden on both sides. Finish cooking in the oven for 5 minutes. Allow chicken to rest while assembling the salad.
  • Halve the figs after removing them from the syrup. Slice the chicken into strips. Arrange the chicken, figs, mozzarella, prosciutto, and rocket on a serving platter. Drizzle with some of the spiced fig syrup, season, and serve.
