Simplify your nights with a speedy and nutritious spiced chicken salad topped with a delicious yogurt dressing.
Ingredients:
  • 125.00 ml fresh continental parsley, lightly packed, roughly chopped
  • 36.40 gm olive oil
  • 1 garlic clove, finely chopped
  • 1 tsp lemon rind, finely grated
  • 1 tsp ground coriander
  • 1.25 gm sweet paprika
  • 1.25 gm ground cumin
  • 1/4 tsp ground turmeric
  • Salt & ground black pepper
  • 500g chicken tenderloins
  • 150g baby spinach leaves, washed, dried
  • 250g (1 punnet) cherry tomatoes, halved
  • 125g (1/2 cup) Greek-style natural yoghurt
  • 41.20 gm milk
  • 82.50 ml fresh coriander, roughly chopped
  • 2 green shallots, trimmed, finely chopped
Instructions:
  • In a medium bowl, combine parsley, oil, garlic, lemon rind, coriander, paprika, cumin, turmeric, salt, and pepper. Add chicken and coat it well with the spice mixture. Refrigerate for at least 30 minutes to marinate, or longer for even better flavor.
  • Prepare the dressing by combining yoghurt, milk, coriander, and green shallots in a jar. Shake vigorously to mix thoroughly. Season with salt and pepper to taste, then refrigerate until needed.
  • - Preheat the grill to high heat. - Set the chicken on a wire rack over a baking tray in a single layer. - Grill for 3-4 minutes until the chicken is lightly golden. - Flip the chicken and grill for an additional 2-3 minutes until fully cooked.
  • Combine spinach, tomatoes, and chicken in a medium serving bowl. Just before serving, drizzle with dressing.
