Middle Eastern spiced chicken with refreshing tomato herb salad. Irresistible!
Ingredients:
  • 4 (about 180g each) chicken breasts on the bone
  • 80ml olive oil
  • 40.00 ml zaatar*, plus extra to sprinkle
  • 3 vine-ripened tomatoes, cut into wedges
  • 250.00 ml flat-leaf parsley leaves
  • 125.00 ml mint leaves
  • 20.00 ml white wine vinegar
  • Thick Greek yoghurt, to serve
Instructions:
  • Preheat the oven to 190°C for the perfect cooking temperature.
  • Coat chicken breasts in 2 tablespoons of oil and zaatar in a baking pan. Massage the marinade into the chicken, then cover and refrigerate for 15 minutes.
  • Roast the chicken in the oven for 25 minutes, or until fully cooked.
  • Combine the tomatoes and herbs in a bowl with the vinegar and remaining oil. Season generously with salt and pepper, then mix everything together thoroughly.
  • On individual plates, arrange the chicken, drizzle with the delicious pan juices, add a dollop of yogurt, and sprinkle with extra zaatar. Serve alongside a fresh salad.
