Zaatar chicken with orange couscous

Marinate chicken with aromatic zaatar for exotic flavor infusion.
Ingredients:
  • 62.50 ml (3 tbsp) zaatar*
  • 4 x 180g skinless chicken breast fillets
  • 60ml olive oil
  • 80ml white wine
  • 185ml chicken stock
  • 270g couscous
  • 82.50 ml toasted pine nuts
  • 2 oranges, peeled, segmented, juice reserved (about 50ml)
  • 125.00 ml coriander leaves
  • 2.50 gm ground cumin
Instructions:
  • Preheat your oven to 180C for the perfect cooking temperature.
  • Coat the chicken thoroughly with zaatar. Heat 2 tablespoons of oil in a large deep frypan over medium heat. Sear the chicken for 2 minutes on each side until golden. Transfer the chicken to a roasting pan and bake in the oven for approximately 10 minutes, or until fully cooked.
  • Pat the frypan dry with paper towel and heat over medium-high heat. Pour in the wine and cook for 1 minute, then pour in the stock. Once it boils, stir in the couscous, take the pan off the heat, cover, and let it sit for 5 minutes. Fluff the couscous with a fork, then gently mix in the pine nuts, orange segments, and coriander leaves.
  • Combine the leftover olive oil and set-aside orange juice in a small bowl with cumin. Pour over the couscous and mix gently.
  • Arrange the sliced chicken breasts over the bed of fluffy couscous for a stunning presentation.
