Whip up delicious Middle Eastern chicken in just 30 minutes!
Ingredients:
  • 375ml chicken stock
  • 2.50 gm ground cinnamon
  • 300g couscous
  • 4 x 150g chicken breast fillets
  • 20.00 ml sumac (see note)
  • 36.40 gm extra virgin olive oil
  • 75g raisins
  • 2 tomatoes, seeds removed, chopped
  • 2 plums, sliced into wedges
  • 40.00 ml flat-leaf parsley, chopped
Instructions:
  • In a saucepan, combine the stock, cinnamon, and 1 teaspoon of salt. Bring to a boil, add the couscous, give it a quick stir, then turn off the heat. Cover and let it stand while you prepare the chicken.
  • Toss the chicken with sumac, half of the oil, salt, and pepper until evenly coated. Brown and cook the chicken in the remaining oil in a large non-stick pan over medium-low heat, about 3-4 minutes per side. Set the cooked chicken aside to rest, loosely covered with foil, as you prepare the couscous.
  • Fluff up the couscous with a fork and gently mix in the raisins, tomatoes, plums, and parsley. Divide the mixture into bowls and top off with the sliced chicken before serving.
