Spiced chicken and couscous with raisins and chickpeas - a new dinner favorite!
Ingredients:
  • 4 chicken thigh cutlets
  • 7.50 gm ground cumin
  • 2 tsp ground coriander
  • 2.50 gm paprika
  • 1 garlic clove, crushed
  • 36.40 gm extra-virgin olive oil
  • 500ml chicken style liquid stock
  • 500.00 ml couscous
  • 82.50 ml raisins
  • 1/4 tsp ground turmeric
  • 400g can chickpeas, drained, rinsed
  • 125.00 ml slivered almonds, toasted
  • 50g baby rocket
  • 52.50 gm lemon juice
  • Lemon wedges, to serve
Instructions:
  • In a bowl, mix together chicken, cumin, coriander, paprika, garlic, and half of the oil. Season well and toss until fully coated.
  • Preheat barbecue or chargrill on high, then adjust heat to medium. Grill chicken for 10-12 minutes per side until charred and fully cooked.
  • While waiting, heat the chicken stock in a small saucepan until it boils. In a heatproof bowl, combine couscous, raisins, turmeric, and the rest of the oil. Pour the hot stock into the bowl and stir with a fork until most of the stock is absorbed. Cover and let it sit for 3 minutes. Fluff up the couscous with a fork, cover again, and let it sit for another 3 minutes. Finally, add chickpeas, almonds, rocket, lemon juice, season to taste, and toss everything together to coat evenly.
  • Plate the chicken alongside the fluffy couscous and garnish with fresh lemon wedges.
