Curry lentil cauliflower soup with spiced chicken for hearty satisfaction.
Ingredients:
  • 36.80 gm vegetable oil
  • 500g Australian Chicken Thigh Fillets, cut into 2cm pieces
  • 60g curry paste
  • 1.25l chicken stock
  • 200g lentils
  • 1/2 cauliflower, cut into small florets
  • 120g baby spinach leaves
  • 270ml can coconut cream
  • 140g yoghurt
Instructions:
  • In a large saucepan over medium-high heat, heat the oil until shimmering. Add the chicken and cook, stirring occasionally, for 2 minutes until browned. Then add the onion and continue to cook, stirring, for 2-3 minutes until the onion softens.
  • Sauté the curry paste until aromatic. Mix in the stock, lentils, and cauliflower. Bring to a boil, then simmer covered for 20 mins until lentils are tender, stirring occasionally.
  • Stir in the spinach and coconut cream with the cauliflower mixture until heated through. Serve the soup in bowls and garnish with dollops of yogurt. Season to taste before serving.
