Try this quick and flavorful one-pan spicy Indian chicken traybake for an easy dinner.
Ingredients:
  • 1 brown onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 3 tsp finely chopped ginger
  • 12 chicken drumsticks
  • 18.20 gm peanut oil
  • 150g (1/2 cup) Korma curry paste
  • 400g can finely chopped or diced tomatoes
  • 210g (1 cup) split red lentils, rinsed
  • 500ml (2 cups) chicken style liquid stock
  • Crème fraîche, to serve
  • Baby fresh coriander, to serve
Instructions:
  • Preheat the oven to 220C/200C fan forced. Scatter onion, garlic, and ginger in a large baking dish. Arrange chicken on top, then coat with curry paste, drizzle with oil, and season to taste.
  • Roast the vegetables and chicken until golden, about 15-20 minutes. Lower the heat to 180°C/160°C fan forced, then turn the chicken with tongs. Drizzle tomato around the chicken, sprinkle lentils over the tomato, and pour in the stock. Roast for another 30 minutes until stock is absorbed and chicken is cooked through. Finish by topping with crème fraîche and coriander.
