Indian-spiced drumsticks with coconut peanut rice recipe

Prepare flavorful Indian spiced chicken drumsticks in just 15 minutes.
Ingredients:
  • 187.50 ml plain Greek-style yoghurt
  • 115.50 gm rogan josh curry paste
  • 3 garlic cloves, crushed
  • 8 chicken drumsticks (about 1.2 kg)
  • 18.40 gm vegetable oil
  • 1 brown onion, thinly sliced
  • 2cm piece fresh ginger, peeled, finely grated
  • 1 sprig fresh curry leaves
  • 82.50 ml unsalted roasted peanuts
  • 300.00 gm basmati rice
  • 382.50 gm Chicken Style Liquid Stock
  • 400ml can coconut milk
  • 125.00 ml frozen peas
  • 40.00 ml fried shallots
  • 125.00 ml fresh coriander sprigs
  • Sliced long red chilli, to serve
  • Curry leaves (optional), to serve
Instructions:
  • Preheat the oven to 180C/160C fan-forced. In a large bowl, combine yogurt, paste, and garlic. Add chicken and mix well to coat evenly.
  • In a sturdy roasting pan, heat oil over medium-high heat. Add onion and cook, stirring, for 5 minutes until light golden. Add ginger, curry leaves, and peanuts and cook for 2 to 3 minutes until nuts are golden. Add rice and stir to coat evenly.
  • Pour in the flavorful stock and creamy milk to the rice, and bring it to a bubbling boil with occasional stirring. Gently lay the succulent chicken on top, then seal it tight with foil before baking it for 40 minutes. Uncover, shift the chicken to the side, and fluff the fragrant rice with a fork. Nestle the chicken and peas over the fluffy rice, and bake it all uncovered for 5 to 10 minutes until the rice is tender and the chicken is beautifully browned and fully cooked.
  • Garnish the chicken with a flavorful mixture of shallots, coriander, chili, and curry leaves (optional).
