Spiced chicken drumsticks with fresh apple chutney

Try Curtis Stone's zesty spiced chicken drumsticks with apple chutney for a delicious meal in a flash.
Ingredients:
  • 1 tsp cayenne pepper
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 20.00 ml garam masala
  • 36.80 gm canola oil
  • 8 chicken drumsticks (about 125g each)
  • 1 tsp fennel seeds
  • 56.25 gm sugar
  • 40.00 ml apple cider vinegar
  • 2 Granny Smith apples, halved, cut in 6mm slices
  • 15g fresh coriander, leaves and tender stems only
  • 15g fresh mint leaves
  • 1 shallot, peeled, thinly sliced into rings
Instructions:
  • Preheat the oven to a piping hot 250C (230C for fan-forced). Place a rack on a sturdy, oversized baking tray.
  • Combine cayenne, ground coriander, turmeric, and 2 teaspoons of fine sea salt in a small bowl. Divide the mixture in half. Mix half with garam masala and 1 tablespoon of oil in a medium bowl. Save the rest for the chutney.
  • Score the chicken with a sharp knife, then coat it completely with the spice-oil mixture. Roast the chicken on a rack in the baking tray for roughly 20 minutes, until it's crispy on the outside and fully cooked.
  • Heat 1 tablespoon oil and fennel seeds in a large saucepan over medium-high heat until seeds are slightly toasted. Stir in sugar, vinegar, and reserved spices until sugar dissolves. Add apples and cook for 3 minutes until apples are crisp-tender and liquid is slightly syrupy. Transfer mixture to a bowl to cool slightly.
  • Combine fresh coriander, mint, and shallots in a medium bowl. Season with a touch of salt. Serve alongside the chicken drumsticks with apple chutney.
