Spiced chicken drumsticks topped with pomegranate seeds, toasted pistachios, and Greek yogurt for a delicious and flavorful meal.
Ingredients:
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 5.00 gm ground paprika
  • 20.00 ml red wine vinegar
  • 36.40 gm olive oil
  • 8 RSPCA Approved Chicken Drumsticks
  • 1 red onion, cut into wedges
  • 40g pomegranate
  • 35g pistachio
  • Greek-style yoghurt, to serve
  • Coriander leaves, to serve
Instructions:
  • Preheat your oven to 200 degrees Celsius.
  • Mix together the cumin, coriander, paprika, garlic, vinegar, and oil in a large ceramic dish. Add the chicken and mix well to coat evenly.
  • Place the chicken and onion in a large baking dish and bake for 40 minutes or until the chicken is fully cooked.
  • Top the chicken with a generous amount of fresh pomegranate seeds and crunchy pistachios. Serve alongside a dollop of creamy yogurt and a sprinkle of fresh coriander leaves.
