Pomegranate and pistachio syrup with yoghurt

Elevate your dinner party with this simple and sophisticated dessert.
Ingredients:
  • 100g (1/2 cup) caster sugar
  • 125ml (1/2 cup) water
  • 125ml (1/2 cup) fresh orange juice
  • 1/2 tsp rosewater essence (optional) (see note)
  • 1 pomegranate, seeds removed
  • 40.00 ml pine nuts
  • 40.00 ml pistachio kernels, thinly sliced
  • 500g Greek-style natural yoghurt
Instructions:
  • Combine sugar, water, and orange juice in a small saucepan over medium-low heat. Stir until sugar dissolves, then increase heat to high and bring to a boil.
  • Lower the heat to medium and let it simmer for 5 minutes, or until the syrup thickens slightly. Then, incorporate the rosewater.
  • Combine pomegranate seeds, pine nuts, and pistachios with the syrup, ensuring everything is mixed well. Transfer the mixture to a bowl, cover, and chill in the fridge for 1-2 hours until completely cooled.
  • Spoon the yogurt into serving glasses and drizzle with the pomegranate syrup before serving.
