Spiced chicken drumsticks with tomato rocket salad - a crowd-pleaser!
Ingredients:
  • 187.50 ml flat-leaf parsley leaves
  • 1 long red chilli, finely chopped
  • 1 tsp dried oregano
  • 8.00 gm brown sugar
  • 3.75 gm smoked paprika
  • 60ml cider vinegar
  • 8 Chicken Drumsticks
  • Olive oil spray
  • 4 small Red Royale potatoes
  • 100g baby rocket leaves
  • 250g cherry tomatoes, quartered
  • 1/2 small red onion, thinly sliced
Instructions:
  • Finely chop 2 tablespoons of parsley and place in a large bowl. Mix in the chilli, oregano, sugar, garlic, 1 teaspoon of paprika, 2 teaspoons of oil, and 1 tablespoon of vinegar. Make 3 slits in each chicken drumstick with a large sharp knife. Add drumsticks to the marinade, coat evenly, and let sit for 15 minutes.
  • Prepare a barbecue grill or chargrill by spraying it with oil and heating it over medium heat. Cook the chicken, turning occasionally, for 10-12 minutes until fully cooked.
  • Place the potatoes on a microwave-safe plate lined with paper towel, sprinkle with water, and cover with another paper towel. Microwave on high for 4-5 minutes until just tender. Slice thickly and toss in a bowl with the remaining paprika and 2 teaspoons of oil. Cook with the chicken for 2-3 minutes on each side until golden brown.
  • In a bowl, mix rocket, tomato, onion, parsley, oil, and vinegar. Season with salt and pepper. Add potato and toss gently. Transfer to a serving platter and top with the chicken.
