Ingredients:
  • 62.50 ml Portuguese dry blend marinade (we used Masterfoods brand)
  • 8 medium chicken drumsticks
  • 36.80 gm vegetable oil
  • 1 brown onion, finely chopped
  • 200.00 gm white rice
  • 125g can corn kernels, drained, rinsed
  • 420g can red kidney beans, drained, rinsed
  • 82.50 ml chopped fresh coriander leaves
  • lime wedges, to serve
Instructions:
  • Set aside 2 teaspoons of the flavorful marinade. Pour the rest into a bowl and mix in the chicken, ensuring it's fully coated.
  • In a large frying pan, heat half of the oil over medium heat. Brown the chicken by cooking and turning for 2 to 3 minutes. Then, reduce heat to low and continue cooking by turning for 5 to 7 minutes until cooked through.
  • Heat the remaining oil in a saucepan over medium heat and sauté the onion until softened, about 3 to 5 minutes. Stir in the rice and reserved marinade, cooking for 30 seconds until fragrant. Pour in 2 cups of cold water and bring to a boil. Lower the heat to medium-low, cover, and simmer for 12 minutes.
  • Combine corn, beans, and coriander with the rice. Cover and let sit for 5 minutes. Fluff the rice with a fork to separate the grains. Serve the chicken alongside the flavorful rice and lime wedges.
