Portuguese Custard Tarts - Pasteis de Nata

Elegant individual egg custard tarts baked in buttery pastry shells.
Ingredients:
  • 1 cup milk
  • 3 tablespoons cornstarch
  • 0.5 vanilla bean
  • 1 cup white sugar
  • 6 egg yolks
  • 1 (17.5 ounce) package frozen puff pastry, thawed
Instructions:
  • Begin by preheating your oven to a toasty 375 degrees F (190 degrees C) and then gently grease 12 muffin cups before lining the bottoms and sides with flaky puff pastry.
  • Combine milk, cornstarch, sugar, and vanilla in a saucepan. Cook and stir continuously until thickened. In a bowl, slowly whisk 1/2 cup of hot milk mixture into egg yolks. Gradually combine egg yolk mixture back into milk mixture, whisking constantly. Cook and stir for 5 minutes until thickened. Remove vanilla bean before serving.
  • Bake the filled pastry-lined muffin cups in a preheated oven for 20 minutes, until the crust turns golden brown and the filling lightly browns on top.
