Portuguese custard tarts, also known as pastel de nata, are irresistible egg custard tarts in flaky puff pastry. They have a golden top, creamy center, and are totally worth the hype. Ingredients:
  • 2 extra large egg yolks
  • 1 extra large egg
  • ½ cup caster sugar
  • 20.00 gm Cornflour
  • 200ml milk
  • 200ml Pure Cream
  • ½ tsp vanilla extract
  • 1 sheet butter puff pastry, defrosted
Instructions:
  • Whisk together eggs, egg yolks, sugar, and cornflour in a saucepan until smooth. Gradually mix in a splash of milk to form a paste. Pour in the rest of the milk, cream, and vanilla, whisking until smooth.
  • Heat mixture until boiling, stirring constantly until it thickens. Transfer the mixture to a bowl and cover it with plastic wrap to prevent a skin from forming. Refrigerate until chilled.
  • Preheat the oven to 210°C (190°C fan-forced) and lightly grease 12 muffin pans with oil.
  • Lay the pastry sheet on the counter and cut it in half to make two rectangles. Stack one on top of the other. Starting from a short end, tightly roll up the pastry to create a log. Cut the log into 12 even pieces.
  • Roll out pastry into 8cm circles and gently fit them into muffin pans. Fill each pastry shell with chilled custard and bake for 20-22 minutes until custard begins to golden. Let cool for a few minutes, then remove from pans. Best when enjoyed warm.
