Make flavorful Portuguese chicken with this simple recipe.
Ingredients:
  • 32.50 gm Portuguese chicken seasoning
  • 8 small chicken drumsticks (see tip)
  • Cooking oil spray
  • 400g pkt made easy roast pumpkin, carrot & sweet potato
  • 450g pkt white rice, to serve
  • 400g can brand red kidney beans, rinsed and drained
  • 125.00 ml coriander leaves, to serve
  • 58.75 gm sour cream, to serve
  • Lime cheeks, to serve
Instructions:
  • Preheat the oven to 200°C (180°C fan). Line a baking dish with parchment paper. Mix seasoning and flour on a plate, then coat the chicken by rolling it in the mixture. Transfer the coated chicken to the dish and spray with oil. Bake for 45-50 minutes until tender.
  • While the vegetables are roasting, follow the packet directions.
  • Prepare rice in the microwave per package instructions. Mix the cooked rice with beans, fresh coriander, and roasted vegetables in a large bowl. Season with your favorite spices. Serve with chicken, a dollop of sour cream, and lime wedges.
