Quick and spicy vegetarian soup, low fat, ready in 30 minutes.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 garlic cloves, chopped
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 5.00 gm ground ginger
  • 44.40 gm tomato paste
  • 400g can chopped tomatoes
  • 2 x 400g cans lentils, rinsed, drained
  • 500ml vegetable stock
  • 1/2 bunch kale, stalks removed, chopped
  • Thick Greek-style yoghurt, to serve
Instructions:
  • In a large saucepan, warm oil over medium heat. Sauté onion, carrot, and celery until softened, about 3-4 minutes. Stir in garlic, spices, and tomato paste, cooking until fragrant, about 2-3 minutes. Add tomato, lentils, stock, and 3 cups (750ml) water. Bring to a simmer and let flavors meld for 6-8 minutes.
  • Add kale to the pot and let it cook for an additional 1-2 minutes until it wilts. Take the pot off the heat and ladle the soup into bowls. Finish by topping each bowl with a dollop of yogurt before serving.
