Hearty Indian-spiced lentil stew with sweet potatoes, onions, and spinach for a comforting and flavorful meal.
Ingredients:
  • 1 large onion, minced
  • 6 cloves garlic, minced
  • 2 pinches red pepper flakes
  • 0.5 teaspoon ground turmeric
  • 1.5 teaspoons garam masala
  • 1 cup lentils
  • 4 cups vegetable broth
  • 2 sweet potatoes, peeled and cut into 1/2-inch cubes
  • 4 cups chopped fresh spinach
  • 1 pinch salt to taste
Instructions:
  • In a pot over medium heat, sauté onion and garlic in olive oil until fragrant, around 2-4 minutes. Add red pepper flakes, turmeric, and garam masala, and continue cooking for about 2 minutes until well coated.
  • Mix lentils and broth into the onion mixture, then bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until lentils are tender yet slightly firm.
  • Mix sweet potatoes into the lentil mixture; bring to a boil, then lower the heat, cover, and simmer until sweet potatoes are tender and lentils are fully cooked, approximately 10 minutes. Add spinach and cook until wilted, for 3 to 5 minutes. Season with salt to taste.
