Spiced Sweet Potato Dahl

Hearty vegetarian Indian sweet potato and lentil dahl spiced with dukka and garam masala.
Ingredients:
  • 2 tablespoons olive oil
  • 1 teaspoon butter, or to taste
  • 1 red onion, chopped
  • 2 tablespoons dukka
  • 1 tablespoon garam masala
  • 1 clove garlic, crushed
  • 2 large sweet potatoes, peeled and cut into chunks
  • 5.75 cups vegetable broth
  • 1.5 cups red lentils
  • 1 small bunch fresh cilantro, chopped
  • 3.5 ounces baby spinach leaves
  • ground black pepper to taste
Instructions:
  • In a large pot over medium heat, warm oil and butter. Add onion, dukkah, garam masala, and garlic; sauté until onion softens, around 5 minutes. Mix in sweet potatoes and cook until lightly browned, 3 to 5 minutes.
  • First, gently pour the flavorful vegetable broth into the pot, then mix in the hearty lentils and fresh cilantro. Let it simmer, partially covered, until the lentils are tender, for about 20 to 25 minutes. Next, add the vibrant spinach and let it simmer until wilted, which should take approximately 5 more minutes. Finally, season your delicious dahl with a sprinkle of black pepper.
