Ingredients:
  • 1 potato
  • 1 sweet potato
  • 60ml oil
  • 1 onion
  • 1 capsicum
  • 1 carrot
  • 2 garlic cloves
  • 1 tsp caraway seeds
  • 2.50 gm paprika
  • 1 chorizo
  • 250.00 ml baby spinach leaves
Instructions:
  • Dice the potato and sweet potato, then simmer in a saucepan filled with cold water, seasoning with salt. Boil until just tender, then drain after 7 minutes.
  • In a non-stick frying pan over medium heat, heat 2 tablespoons of oil. Sauté the potatoes until golden, about 5 minutes, stirring occasionally. Add remaining oil, diced vegetables, finely chopped garlic, caraway seeds, paprika, and sliced chorizo. Cook and stir for another 5 minutes until vegetables are soft.
  • Fry eggs until whites are set and yolks are still runny, about 3 minutes.
  • Mix vegetables with fresh leafy greens and distribute evenly onto serving plates. Garnish with eggs before serving.
